Ingredients
- 1 pound zucchini, sliced
- 1/2 medium onion, sliced
- 4 eggs
- 1-1/2 cups grated Swiss cheese
- 1/2 teaspoon oregano
- 1/2 teaspoon basil
- salt & pepper to taste
Method
Step 1
Steam zucchini and onion until tender, about 4-7 minutes.
Step 2
Beat eggs. Fold in cheese.
Step 3
Mash vegetables and add to egg and cheese mixture. Blend well and sprinkle with spices.
Step 4
Pour into a heavy baking dish and bake covered at 325° for 40 minutes.
