Ingredients
- 3-4 zucchini, unpeeled
- 1 cup cold water
- 1-1/2 cup biscuit mix (pancake mix also works)
- 1 egg
- 1 tablespoon Parmesan cheese, grated
- 1/2 teaspoon garlic salt
- oil for frying
Method
Step 1
Slice zucchini on a diagonal into long, thin ovals.
Step 2
Add water to biscuit mix, beating with a fork. Add egg and continue beating until smooth. Add cheese and garlic salt.
Step 3
Dip zucchini into batter and fry on both sides in oil. Sprinkle a little more salt on top and serve at once.
Broccoli, carrots, onions or other veggies also work well with this batter
