Ingredients
- 1 cup chopped dates
- 1 cup boiling water
- 1 tablespoon oil
- 1 cup brown sugar
- 1 egg
- 1 teaspoon vanilla
- 2 cups flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup chopped walnuts
Method
Step 1
Mix dates, water and oil. Let stand for 10 min. (do not drain). Add brown sugar egg and vanilla, mix well.
Step 2
Mix flour, baking soda and salt. Stir into date mixture just until combined. Fold in nuts. Transfer to greased loaf pan. Bake at 350° for 50-60 minutes. Cool for 10 minutes before removing from pan.
