Ingredients

  • 1 red onion, sliced
  • 1 fennel bulb, sliced
  • 1 can cannellini beans, rinsed and drained
  • 2 cloves garlic, minced
  • 4 chicken breast halves or other cut
  • 1/2 cup roasted red pepper, jarred or roast 1 pepper on your grill or gas burner
  • 4 cups fresh spinach, chopped
  • 1 cup chicken broth
  • salt & pepper

Method

Step 1

If desired, brown chicken in a skillet with 1 tablespoon of oil.

Step 2

Put onion, fennel, beans and garlic in slow cooker. Pour chicken broth over. Season chicken with salt and pepper and place on top of vegetables and beans. Top with roasted peppers and surround with spinach. Cover and cook on low 6-7 hours, or high 3-4 hours.
