Ingredients
- 2 cans (32 ounces) crushed tomatoes
- 2 large cans (48 ounces) chicken broth
- 2 package (9 ounces) cheese tortellini
- 4 ounces salt pork
- 1 bunch escarole or other greens
- 1/2 teaspoon oregano
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
Method
Step 1
Cook salt pork in pot until it renders its fat, about 10 minutes. Remove salt pork.
Step 2
Add crushed tomatoes, oregano, salt and pepper. Add broth and let cook about 20 minutes.
Step 3
Cook tortellini according to package directions. Drain and add to soup. Or, you can cook it in the soup. Finally add escarole and let simmer for 10 minutes.
