- 1 medium onion, chopped
- 1 garlic clove, minced
- 2 cans (14-1/2 ounces each) low sodium chicken broth
- 8 ounces cheese tortellini
- 1 can (14-1/2 ounces) Italian stewed tomatoes
- 1 package frozen chopped spinach
Method
Step 1
Saute onion and garlic in a sprayed soup pot until tender. Add broth and bring to a boil. Add tortellini. Reduce heat. Simmer for 10 minutes until tortellini is tender. Stir in tomatoes and spinach and heat through.
