Ingredients

  • 2 tablespoons extra virgin olive oil
  • 2 carrots, chopped
  • 1 medium onion, chopped
  • 1 rib celery, chopped
  • 1 can (14-1/2 ounces) chicken broth
  • 1 jar Romano and garlic pasta sauce
  • 1 package (9 ounces) frozen tortellini
  • 1 cup frozen peas
  • 1 teaspoon dried basil

Method

Step 1

In a large pot heat oil and cook carrot, onion and celery until crisp tender.

Step 2

Add chicken broth and pasta sauce. Bring to a boil over high heat. Reduce heat to low and simmer, stirring occasionally for 30 minutes until vegetables are tender.

Step 3

Cook tortellini separately according to package directions. Drain. Add to soup. Add peas and basil. Simmer 5 minutes. Top with black pepper, grated cheese, or crushed red pepper when serving.
