Ingredients

  • 1/3 cup olive oil
  • 2 tablespoons red wine vinegar
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon oregano
  • 1/4 teaspoon pepper
  • 3 medium tomatoes, chopped
  • 1 cucumber, quartered and sliced
  • 1 green pepper, chopped
  • 1/4 cup thinly sliced onion
  • 1 tablespoon fresh basil
  • 2 tablespoons fresh parsley
  • 1/4 cup sliced black olives
  • 4 ounces fresh mozzarella cheese

Method

Step 1

In a jar, combine first 7 ingredients and shake well.

Step 2

In a large bowl combine tomatoes, cucumber, green pepper, onion, olives, parsley, and basil. Drizzle with dressing. Toss to coat. Cover and refrigerate for 15 minutes. Just before serving stir in cheese.
