Ingredients
- 1 cup instant potato flakes
- 1/3 cup grated Parmesan cheese
- 1/4 teaspoon celery salt
- 1/4 teaspoon garlic powder
- 1/4 cup margarine, melted and cooled
- 2 eggs
- 4-5 cups mixed vegetables: mushrooms, peppers, broccoli, cauliflower, and zucchini
- Vegetable dip or ranch dressing
Method
Step 1
Combine flakes, cheese, salt, garlic powder and margarine. In another bowl, beat eggs.
Step 2
Dip vegetables one at a time into egg then into potato mixture. Coat well. Place on ungreased baking sheet. Bake at 400° for 20-25 minutes. Serve with dip or ranch dressing.
