Ingredients

  • 5-6 pounds pork spareribs
  • 1/2 cup brown sugar
  • 1/2 cup sugar
  • 2 tablespoons cornstarch
  • 1 cup ketchup
  • 2/3 cup vinegar
  • 1/2 cup cold water

Method

Step 1

Remove membrane from bone side of ribs and cut into serving pieces.

Step 2

Place ribs on rack in shallow roasting pan. Bake at 350° for 1-1/2 hours. Or, seal ribs in air tight food-grade bags and sous vide for 150° for 15 to 24 hours.

Step 3

Combine other ingredients in a saucepan. Bring to a boil. Cook and stir until thickened and clear, about 3 minutes.

Step 4

Remove ribs and rack from pan. Discard fat. Place ribs back in roasting pan. Pour 1-1/2 cup of sauce over ribs. Bake 30 minutes longer. Brush with remaining sauce.
