Ingredients

  • 3 large sweet potatoes
  • 1 small can (6 ounces) crushed pineapple, drained
  • 1/2 cup raisins
  • 1/2 teaspoon cinnamon
  • 1/3 cup brown sugar
  • 2 tablespoons butter

Method

Step 1

Cook sweet potatoes in boiling water for about 15 minutes until soft. Cool and remove jackets. Mash potatoes.

Step 2

Add remaining ingredients and mix well.

Step 3

Bake at 350° until heated through and top is slightly crisp. Can be prepared the day before baking. Dot with some additional butter to prevent drying.
