Ingredients
- 1-1/2 pounds cleaned medium squid with tentacles
- 4 cups bread crumbs
- 1 cup grated Parmesan cheese
- 1/2 cup chopped parsley
- 1 cup olive oil, divided
- 1 can (32 ounces) of crushed tomatoes
- 1/2 cup basil, chopped
- 4 garlic cloves, chopped
- 2 cans (6 ounces each) tomato paste
- 2 teaspoons oregano
- 2 tablespoons sugar
Method
Step 1
In a bowl combine the bread crumbs, cheese, parsley and 1/2 cup of oil.
Step 2
Wash squid. Lightly stuff each tube and close with toothpicks.
Step 3
In a large skillet, brown squid in oil on all sides. Remove from pan.
Step 4
In the same pan, brown garlic for about 2 minutes. Add tomatoes, tomato paste, basil, oregano, and sugar. Simmer for 15 minutes. Return squid to sauce and simmer for another 15 minutes, or until heated through.
Step 5
Serve over pasta.
