Ingredients

  • 1-1/2 pound ground beef
  • 1-1/2 cup cooked rice, barley or quinoa
  • 1 cup grated Parmesan cheese
  • 1/2 teaspoon oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 teaspoon parsley flakes
  • 1/2 teaspoon garlic powder
  • 2 cups spaghetti sauce, divided
  • -5-6 bell peppers, tops and seeds removed, slice lengthwise if large

Method

Step 1

Parboil peppers in a pot of boiling water for 2-3 minutes to soften if desired. Drain.

Step 2

In a frying pan brown beef. Drain. Add cooked rice, cheese, and spices until heated through. Stir in 1 cup of spaghetti sauce.

Step 3

Stuff peppers with beef mixture. Place in a baking dish. Bake at 350° for 20 minutes. Top with remaining sauce and bake 10 minutes more.
