Ingredients
- 12 ounces spaghetti, uncooked
- 1 tablespoon olive oil
- 2 teaspoons chopped garlic
- 2 pounds raw fresh mussels
- 1/2 cup dry white wine
- 1 teaspoon lemon zest
- 2 tablespoons capers
- 1/2 teaspoon salt
- 1/4 teaspoon crushed red pepper
- 3 tablespoons chopped parsley
Method
Step 1
Scrub mussel shells. Discard any mussels that are open.
Step 2
Cook spaghetti according to package directions. Reserve 1 cup of water before draining.
Step 3
In a skillet heat oil. Add garlic and cook for 30 seconds. Add mussels, wine, lemon zest, capers, salt and red pepper. Cover and cook 3-5 minutes until shells open.
Step 4
Toss mussels with drained pasta. Add parsley. Add reserved cooking water as needed.
