Ingredients

  • 1/2 teaspoon garlic salt
  • 1/4 teaspoon ground ginger
  • 1/2 teaspoon sage
  • 1 fresh pork shoulder picnic bone-in, or Boston butt roast (5-6 pounds)
  • 1/2 cup milk
  • 3 tablespoons flour
  • dash gravy coloring (like Gravy Master)
  • salt & pepper
  • 4 cups water

Method

Step 1

Combine garlic salt, ginger and sage. Rub mixture into lean side of pork.

Step 2

Place pork fat side up on rack in shallow pan. Cook at 325° for about 30 minutes per pound, until fork tender. An internal temperature of about 180° is a good texture. Remove roast. Drain fat from pan.

Step 3

Add remaining ingredients to roasting pan drippings. Stir over medium heat until thickened into gravy, about 10 minutes. Strain and serve over roast.

Got leftovers? Make some carnitas. Slice or shred pork into strips and fry in hot oil until crispy. Use in tacos, burritos or carnitas salad.
