- 1 pint scallops (if sea scallops cut in half)
- 12 Royal crackers, crumbled *
- 1-1/3 stick margarine, cut up and divided
- 1-1/2 cans evaporated milk
- 1/2 sleeve Ritz crackers
Method
Step 1
* Royal crackers seem to be discontinued. You can substitute tea biscuits, lunch milk crackers, or oyster crackers, about 1-1/2 cups crumbled.
Step 2
Grease a 3 quart casserole dish. Mix scallops, flaky crackers, 1 stick of margarine and evaporated milk. Put in casserole for several hour or overnight. If mixture seems too thick add plain milk. If too thin add more crackers.
Step 3
Crumble Ritz crackers. Mix with remaining melted margarine and sprinkle over scallop mixture. Bake uncovered at 350° for 30 minutes then reduce heat to 300° and bake for 30-40 minutes more.
