- 1 pint (about 1/2 pound) scallops. If sea scallops cut in half
- 12 Royal Lunch Crackers, crumbled
- 1-1/3 stick margarine, cut up and divided
- 1-1/2 cans evaporated milk
- 1/2 sleeve Ritz crackers
Method
Step 1
Grease a 3 quart casserole dish. Mix scallops, flaky crackers, 1 stick of cubed margarine and evaporated milk. Put in casserole for several hour or overnight. If mixture seems too thick add plain milk. If too thin add more crackers.
Step 2
Crumble Ritz crackers. Mix with remaining melted margarine and sprinkle over scallop mixture. Bake uncovered at 350° for 30 minutes then reduce heat to 300° and bake for 30-40 minutes more.
Royal Lunch Crackers are hard to find these days. You can substitute oyster crackers, breadcrumbs, or a biscuit type cookie if it’s not too sweet.
