Ingredients
- 6 boneless skinless chicken breasts or thighs
- 1/4 teaspoon salt
- 1 pound fresh mushrooms, chopped
- 1 tablespoon lemon juice
- 2 garlic cloves, minced
- 1 teaspoon basil
- 3 tablespoons butter
- 1/2 cup chicken broth
- 2 tablespoons orange juice
- 1 cup bread crumbs
- 1/3 cup Romano cheese
- 2 tablespoons oil
- Fresh basil (optional)
Method
Step 1
Brown chicken in oil. Transfer to a greased 13x9-in baking dish. Sprinkle with salt.
Step 2
In a skillet saute mushrooms, lemon juice, garlic, and basil in butter. Stir in broth and orange juice Bring to a boil. Reduce heat and simmer 2-3 minutes.
Step 3
Spoon sauce over chicken. Sprinkle with bread crumbs and cheese.
Step 4
Bake at 400° for 18-25 minutes depending on thickness. Sprinkle fresh basil over top if desired.
To cut carbs leave out the breadcrumbs and sprinkle with additional cheese
