Ingredients
- 2 eggplants, cut into 1/4-in slices
- 1/2 teaspoon garlic
- 1/2 teaspoon rosemary
- 1/2 teaspoon salt
- 1/2 teaspon cumin
- 3 tablespoons olive oil
- 1/2 cup grated Parmesan cheese
Method
Step 1
Mix spices in food processor. Spread eggplant slices on greased cookie sheet. Drizzle with oil and spread spice mixture on top. Sprinkle with cheese. Bake at 425° for 20 minutes until eggplant is soft. Broil for 1 to 2 more minutes until brown.
