Ingredients

  • 1 box (15.25 ounces) chocolate cake mix
  • 1/4 cup oil (or package instructions)
  • 3 eggs (or package instructions)
  • 1 cup water (or package instructions)
  • 2 pounds ricotta cheese
  • 1 cup sugar
  • 4 eggs
  • 1 teaspoon vanilla extract

Ingredients (frosting)

2 squares unsweetened chocolate

2 cups confectioners’ sugar

4 tablespoons milk

4 tablespoons margarine

1 teaspoon vanilla extract

Method

Step 1

Prepare cake batter according to package directions. Pour into a greased and floured 13-in. x 9-in. pan.

Step 2

Mix well cheese, sugar, eggs and vanilla. Pour over cake and bake at 350° for 1 hour.

Step 3

For frosting, melt chocolate and margarine. Remove from heat. Whisk in sugar, milk and vanilla. Spread over cooled cake. Refrigerate until serving.
