Ingredients
- 2 cups long grain rice, cooked and chilled
- 1/4 cup chopped green onion
- 1 small red pepper, diced
- 1/4 cup celery, diced
- 1/4 cup ripe olives, drained and sliced
- 1/4 cup oil
- 1-1/2 tablespoons wine vinegar
- 1/2 teaspoon Dijon mustard
- Salt & pepper to taste
Method
Step 1
Combine first 5 ingredients in a bowl.
Step 2
Beat/whisk together oil, wine vinegar, and mustard. Pour over rice mixture. Season with salt & pepper. Toss well. Chill before serving.
