Ingredients
- 3/4 cup Crisco
- 3/4 cup sugar, divided
- 1/4 teaspoon salt
- 1/4 cup almond extract
- 2 eggs separated
- 1-1/2 cups flour
- 1 cup raspberry preserves
- 1/2 cup coconut
Method
Step 1
Cream Crisco, salt and 1/4 cup sugar until fluffy. Blend in extract and egg yolks. Mix in flour.
Step 2
Put into an ungreased 13-in. x 9-in. pan. Bake at 350° for 15 minutes.
Step 3
Spread hot crust with preserves. Top with coconut. Beat egg whites until foamy. Gradually beat in 1/2 cup sugar until stiff peaks form. Spread over coconut. Bake for 25 minutes. Cool. Cut into bars.
