Ingredients

  • 1 package (3 ounces) chicken ramen noodles
  • 1-1/2 cups frozen California blend (or mixed) vegetables, thawed
  • 1/4 cup celery, chopped
  • 1/4 cup frozen peas, thawed
  • 1/2 cup water
  • 1/2 pound boneless chicken cut into 1-in strips
  • 2 tablespoons of soy sauce
  • 2 tablespoons canola oil
  • 1 teaspoon sugar
  • Crushed red pepper flakes

Method

Step 1

Set aside seasoning packet from noodles. Break up noodles. Mix with frozen vegetables, celery, peas and water in a microwave safe dish. Cover and microwave on high 4-5 minutes, stirring once.

Step 2

Place chicken in another microwave safe dish. Cover and microwave on high 2-3 minutes. Stir chicken into noodle mixture.

Step 3

Meanwhile mix soy sauce, oil, seasoning packet, sugar and pepper flakes. Pour over chicken mixture. Microwave uncovered for 45 seconds until heated through.
