Ingredients

  • 4 boneless chicken breasts
  • 1/4 cup honey mustard
  • 8 thin slices deli ham or leftover cooked ham
  • 1 tablespoon butter, melted
  • 1/2 cup pretzels, crushed

Method

Step 1

Cut a horizontal slit in side of each chicken breast to within 1/2 inch of the opposite side. Spread honey mustard inside each pocket. Stuff with 2 ham slices. Place in greased 13x9-in. baking dish. Brush with butter. Sprinkle with pretzels. Bake at 350° for 40-45 minutes.

To reduce the carbs (to about 4 per serving) replace the honey mustard with a stone ground mustard and use crushed pork rinds instead of pretzels.
