Ingredients
- 1 package (15.25 ounces) yellow cake mix with pudding
- 1 cup evaporated milk
- 1 cup (8 ounces) crushed pineapple with juice
- 2 eggs
- 1 teaspoon nutmeg
- 1/2 cup flaked coconut
- 1/2 cup confectioners' sugar (optional)
- 2 tablespoons milk (optional)
Method
Step 1
Mix first 5 ingredients and beat for 2 minutes. Stir in coconut. Spoon into 2 greased 9-in. x 5-in. loaf pans or 5 mini loaf pans. Bake at 325° for 45 to 50 minutes (30-35 if making mini loafs). Cool completely.
Step 2
If desired, mix confectioners' sugar and milk and glaze cooled loaves.
