Ingredients

  • 2 cups flour
  • 3/4 cup sugar
  • 3 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 can (8-1/2 ounces) crushed pineapple, undrained
  • 2 tablespoons melted shortening
  • 1 large egg
  • 1/2 cup grated cheddar cheese
  • 1/2 cup walnuts

Method

Step 1

Mix flour, sugar, baking powder, baking soda and salt.

Step 2

In another bowl, lightly beat egg. Stir in crushed pineapple and shortening. Add dry mixture and stir quickly until all is moistened. Stir in cheese and walnuts.

Step 3

Pour into greased 9-in. x 5-in. loaf pan. Bake at 350° for 1 hour. Cool completely before cutting.
