Ingredients
- 1 tube (16.5 ounces) refrigerated sugar cookie dough
- 1-1/2 cup slivered almonds, divided
- 1 jar (18 ounces) peach preserves (*)
- 1/2 cup sugar
- 4 egg whites
Method
Step 1
Press cookie dough into ungreased 13-in. x 9-in. pan. Bake at 350° for 12 to 15 minutes.
Step 2
Spread preserves over crust. Sprinkle with 3/4 cup almonds.
Step 3
Beat egg whites until peaks form. Gradually beat in sugar 1 tablespoon at a time, on high until stiff peaks form. Spread meringue evenly over almonds. Sprinkle with remaining almonds.
Step 4
Bake at 350° for 20 to 25 minutes until light brown. Cool on wire rack. Store in refrigerator.
*As written the recipe is very sweet. You can cut the preserves by half if you want to make it less sweet.
