Ingredients (for the chicken)
- 1 cup Italian bread crumbs
- 2 tablespoons Parmesan cheese
- 1 garlic clove, minced
- 1/4 cup vegetable oil
- 2 pounds boneless skinless chicken breasts
Ingredients (for the cranberry dipping sauce)
- 2 teaspoons cornstarch mixed with 1 tablespoon water
- 1/4 cup sugar
- 1/4 cup fresh or frozen cranberries
- 1/2 cup orange juice
- 1/4 cup water
Ingredients (for the honey mustard dipping sauce)
- 2 tablespoons cornstarch mixed with 1 tablespoon water
- 1/2 cup honey
- 1/4 cup mustard
- 1 cup water
Method
Step 1
Mix bread crumbs and cheese. Mix oil and garlic. Flatten chicken to 1/2 inch. Cut into 1 inch strips. Dip in oil and then crumbs. Place on greased baking sheet. Bake at 350° for 20 minutes.
Step 2
Meanwhile combine ingredients for cranberry sauce in a saucepan. Bring to a boil stirring constantly. Cook and stir 2-3 minutes more, crushing and stirring the berries while stirring.
Step 3
Combine ingredients for honey mustard sauce in a saucepan. Bring to a boil over medium heat. Boil for 1 minute stirring constantly.
Step 4
Serve chicken with sauces
