Ingredients
- 2 cups grape tomatoes, quartered
- 2 celery ribs, chopped
- 1/2 cup shredded carrot
- 1/2 cup mixed olives
- 1/4 cup minced fresh parsley
- 1/4 cup chopped red onion
- 2 teaspoons minced garlic
- 3 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 1 baguette, sliced and toasted
Method
Step 1
In a large bowl, combine the first eight ingredients. In a small bowl, whisk the oil, vinegar, salt and pepper. Pour over vegetables. Chill until serving. Serve with toasted baguette.
