Ingredients
- 1/4 cup salt pork, finely diced
- 2 medium onions, finely chopped
- 4 medium potatoes, cubed
- 3 cups boiling water
- 2 pounds white fish fillets, cut into bite size pieces
- 1-1/2 teaspoon salt
- 1/8 teaspoon white pepper
- 2 cans (13 oz each) evaporated milk
Method
Step 1
In a pot sauté salt pork and onions until pork pieces are crispy brown. Add potatoes, water, salt and pepper. Cover pan. Simmer 10-15 minutes. Add fish. Cook 5-10 minutes longer. Stir in evaporated milk, heat thoroughly without boiling.
