Ingredients

  • 1 cup celery, sliced
  • 1/2 cup onion, chopped
  • 2 garlic cloves, minced
  • 3 tablespoons margarine
  • 1-1/2 cup chicken broth
  • 4 cups potatoes, peeled and cubed
  • 1 cup carrots, julienned
  • 1/4 teaspoon pepper
  • 1 tablespoon fresh parsley, chopped

Method

Step 1

Saute celery, onion and garlic in margarine. Add broth, potatoes, carrots and pepper. Bring to a boil. Reduce heat. Cover and simmer 15 minutes until potatoes are tender.

Step 2

Uncover and simmer for 5 minutes until broth has thickened slightly, stirring occasionally.

Step 3

Sprinkle with parsley. Serve with a slotted spoon.
