Ingredients
- 3 pounds country style pork ribs
- 1 pound (2 sticks) pepperoni or other spicy sausage, cut into 1 inch pieces
- 4 cloves garlic, minced
- 1 head green cabbage, cut into quarters
- 1 bunch escarole or kale
- 2 carrots, sliced
- salt & pepper
- 10 cups water
Method
Step 1
Place ribs and pepperoni in a pot. Cover with water and bring to a boil. Reduce to a simmer and cook for about 2 hours until pork is tender. Skim top of water as needed while cooking. Remove meat from the bones and strain the broth.
Step 2
Meanwhile bring a pot of salted water to a boil. Drop in greens and carrots in batches and cook just until al dente, about 30 seconds.. Remove and drain. Spread the greens out so they stop cooking and cool. Bring the water back to a boil for each batch.
Step 3
Add vegetables and garlic to the meat and strained broth. Season with salt and pepper. Mix and heat through. Serve over corn meal bread.
