Ingredients

  • 1 pound ground beef or turkey
  • 2 to 3 eggs
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 tablespoon parsley flakes
  • Other seasonings to taste (basil, crushed red pepper, etc.)
  • salt & pepper to taste
  • 3 slices bread soaked in milk
  • 1 cup bread crumbs

Method

Step 1

Place all ingredients in a large bowl. Mix with gloved or oiled hands until ingredients are even, but don't overwork the meat. Roll into 1-1/2-in. balls and place on a greased or parchment lined cookie sheet. Bake at 400° for 25 to 30 minutes. You can use a cooking rack if the beef has a lot of fat.

Step 2

If you roll the meatballs larger then reduce heat to 350° and cook an extra 10-15 minutes.

To cut the carbs leave out the bread and breadcrumbs. Add about 1/2 cup of almond flour and double the cheese
