Ingredients
- 2 chicken legs or 4 chicken thighs or drumsticks
- 1/2 cup French salad dressing
- 2 tablespoons soy sauce
- 1/2 teaspoon chicken bouillon granules
- 1/8 teaspoon each garlic powder, ginger, and chili powder
- 1 tablespoon dried onion
- 1 can (11 ounces) mandarin oranges, drained and juice reserved
- 1 tablespoon cornstarch
- 2 tablespoons water
- 1-1/2 cups cooked long grain rice
Method
Step 1
Place chicken on 11x7-in. baking pan lined with heavy duty foil.
Step 2
Whisk salad dressing, soy sauce, bouillon, garlic powder, ginger, and chili powder. Brush over chicken. Sprinkle with onion.
Step 3
Pour 1/4 cup reserved orange juice over chicken. Cover and bake at 350° for 25 minutes. Uncover and bake 20-25 minutes more. Remove and reserve pan drippings.
Step 4
In a saucepan mix cornstarch and water until smooth. Stir in pan drippings and remaining orange juice. Bring to a boil and stir for 1-2 minutes until thickened. Stir in oranges. Cook 1 minute longer. Serve sauce over chicken and rice.
