Ingredients
- 1/4 cup balsamic vinegar
- 1 tablespoon black olive brine/juice
- 1 tablespoon green olive brine/juice
- 1/4 cup extra virgin olive oil
- 2 cloves garlic, pressed
- 2 tablespoons fresh basil, minced
- Fresh vegetables of choice, greens, cherry tomatoes, bell peppers, etc. Chop some olives too if you want.
- 1 cup fresh broccoli florets
- 1 cup fresh cauliflowerets
- 10 ounces tri-colored rotini, cooked and drained
- 4 quarts water
- 1 teaspoon salt
Method
Step 1
Whisk together first 6 ingredients. Set dressing aside.
Step 2
To parboil broccoli and cauliflower, bring salted water to a boil in a pot. Add broccoli and cauliflower. Cook for 1 minutes. Strain and immediately place in a bowl of ice water. Drain when cooled.
Step 3
Combine pasta, broccoli, cauliflower, and other vegetables of your choosing in a bowl. Pour dressing over and mix. Chill until serving.
