Ingredients
- 1 pkg (2 cups) lentils
- 2 quarts water
- 1/2 cup olive oil
- 1 cup chopped celery
- 1/2 cup grated carrot
- 1 onion, quartered
- 1 tablespoon tomato paste
- 3 garlic cloves , peeled
- 2 bay leaves
- salt & pepper to taste
Method
Step 1
Rinse lentils several times and drain. Combine all ingredients in a large pot. Bring to a boil. Reduce heat and simmer, covered for 2 hours. Season with additional salt & pepper.
