Ingredients(for the bread)
- 1/2 cup shortening or butter
- 1 cup sugar
- 2 eggs
- 1-1/2 cup sifted flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup milk
- 1 teaspoon lemon extract
- 1/2 cup nuts
Icing
- juice of 1 lemon
- 1/2 cup sugar
Method
Step 1
In a mixing bowl cream shortening with sugar. Beat in eggs one at a time. Add milk and lemon extract. Beat in dry ingredients a little at a time. Fold in nuts. Pour into a greased 8-in. x 4-in. loaf pan. Bake at 325° for 1 hour.
Step 2
Combine the icing ingredients. Pour over hot baked loaf in pan. Let cool before removing from pan.
