Ingredients

  • 1 cup unsalted butter
  • 1/2 cup sugar
  • 1-1/2 tablespoon freshly grated lemon zest
  • 1/2 teaspoon lemon extract
  • 1 teaspoon vanilla extract
  • 1 cup toasted coconut
  • 2 cups flour
  • confectioners' sugar

Method

Step 1

Cream butter and sugar until light and fluffy. Beat in extracts and flour. Stir in coconut. Cut dough in half. Roll each into an 8-in. log. Wrap in waxed paper and refrigerate for at least 4 hours.

Step 2

Cut logs into 1/4-in. slices and place 2-in. apart on a lightly greased cookie sheet. Bake at 300° for 20 to 25 minutes or until lightly browned. Let cool and dust with confectioners' sugar.
