Ingredients
- 1/2 tablespoon coriander
- 1/2 tablespoon cumin
- 1/2 teaspoon black pepper
- 1/4 teaspoon crushed red pepper
- 2 tablespoons chopped ginger
- 1/2 tablespoon ground allspice
- 1/2 teaspoon salt
- 8 pork chops
- 1-2 tablespoons rum
- 3 tablespoons ketchup
- 1 teaspoon hot pepper sauce
- 2 tablespoons light soy sauce
- 2 tablespoons oil
- 1 onion, chopped
- 1 tablespoon brown sugar
- 1 cup chicken stock
- 1 tablespoon lemon juice
Method
Step 1
Combine first 7 ingredients and rub into pork chops. Cover and refrigerate for at least 2 hours.
Step 2
Mix rum, ketchup, hot pepper sauce, and soy sauce. Set aside.
Step 3
Brown chops in oil. remove to a platter. Add the onion to the pan and brown lightly. Add sugar and cook until it melts. Add rum mixture, stock and lemon juice and bring to a boil.
Step 4
Add chops. Cover and simmer for 30 minutes, turning once. Serve over rice.
