Ingredients

  • 1 boneless chicken breast, cut into strips
  • 3 tablespoons margarine or butter
  • 1 zucchini, halved and thinly sliced
  • 8 ounces angel hair, uncooked
  • 1/4 cup chicken broth
  • 3 tablespoons lemon juice
  • 20 cherry tomatoes, halved
  • 3/4 cup Parmesan cheese
  • 3/4 cup crumbled tomato and basil feta cheese

Method

Step 1

Cook pasta according to package directions.

Step 2

Cook chicken in margarine. Add zucchini and cook for 4 minutes. Stir in broth and lemon juice. Bring to a boil, cover, and simmer for 5 minutes.

Step 3

Drain pasta. Toss with chicken mixture and tomatoes. Sprinkle with cheeses.
