Ingredients
- 3 tablespoons extra virgin olive oil
- 2 tablespoons minced garlic
- 1 can (2 ounces) anchovy fillets, undrained and mashed
- 1 can (35 ounces) Italian plum tomatoes, drained and crushed
- 1/2 cup pitted black olives, coarseley chopped
- 1 tablespoon drained tiny capers
- 1/4 teaspoon dried oregano
- pinch each of crushed red pepper, salt and pepper
- 2 tablespoons chopped fresh parsley
- 12 oz linguine or pasta of your choice, cooked
- Freshly grated Parmesan cheese
Method
Step 1
Mash together the oil, garlic, and anchovies in a saucepan and sauté for a few minutes until garlic is browned and anchovies are soft.
Step 2
Add tomatoes, olives, capers, oregano and red pepper flakes. Bring to a boil. Reduce heat and simmer, uncovered, stirring occasionally until slightly thickened, about 20 minutes. Season with salt and pepper and stir in the parsley.
