Ingredients

  • 3 cups frozen hash browns, thawed
  • 1/3 cup margarine, melted
  • 1 cup diced cooked ham
  • 1 cup (4 ounces) shredded cheddar cheese
  • 1/2 cup green pepper, diced
  • 2 eggs
  • 1/2 cup milk
  • Salt & pepper
  • 3 tablespoons chopped fresh parsley (optional)

Method

Step 1

Press hash browns between paper towels to remove excess moisture. Press into bottom and up the sides of an ungreased 9-in pie plate. Drizzle with melted margarine. Bake at 425° for 25 minutes until browned.

Step 2

Combine ham, cheese, and green pepper. Spoon over crust. Beat eggs and milk with salt & pepper. Pour over all. Sprinkle with parsley if desired. Bake at 350° for 25-30 minutes. Allow to stand for 10 minutes before cutting.

Note this recipe also works with tater tots. Bake them in the pie plate for about 10 minutes at 425° then mash them into a crust and bake for 10-15 minutes more. You don’t need the margarine. Add filling and bake as directed.
