Ingredients
- 1 can (10-1/2 ounces) condensed tomato soup, undiluted
- 1 soup can of water
- 1 cup cucumber, thinly sliced (about 1 small)
- 1/4 cup green pepper, finely chopped
- 1/4 cup onion, minced
- 2 tablespoons olive oil
- 2 tablespoons wine vinegar
- 1 small garlic clove, minced
- Salt & cayenne pepper to taste
Method
Step 1
Combine all ingredients. You can stir it together and make it chunky or purée it and reserve some of the veggies for topping. Chill for at least 4 hours before serving. Top with reserved veggies, parsley, or a drizzle of balsamic vinegar.
