Ingredients
- 2 cups flour
- 2 teaspoons cinnamon
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 eggs
- 1 cup oil
- 1 teaspoon vanilla extract
- 4 cups apples, peeled and chopped
- 1 cup chopped walnuts
Method
Step 1
In a bowl combine the first 4 ingredients.
Step 2
In another bowl beat the eggs until foamy. Add remaining ingredients. Stir in dry mixture until moistened.
Step 3
Fill greased or paper lined muffin cups three-quarters full. Bake at 350° for 15-20 minutes.
