Ingredients

  • 2-3 pounds spareribs, cut into serving pieces
  • 1-1/2 cups cold water
  • 2 tablespoons soy sauce
  • 1/2 cup sugar
  • 1/2 cup white wine

Method

Step 1

Remove membrane from back of ribs.

Step 2

Place ribs, water, and soy sauce in a large, heavy pot. Bring to a boil over high heat. Cover and reduce heat. Simmer for 45 minutes.

Step 3

Mix together sugar and wine. Remove cover from ribs and turn heat to high. Add wine mixture.

Step 4

Stir the ribs occasionally. The liquid will gradually evaporate. It may take 20-30 minutes. Do not leave pot unattended once evaporation begins.

Step 5

When liquid is gone, ribs will be browning in their own fat. Brown on both sides, being careful they do not burn. Drain on paper towels. For appearance add a can of apricots, peach halves or pineapple. Ribs can be made in advance and kept in warm oven.
