Ingredients
- 2 cups flour
- 3/4 cup sugar
- 2 teaspoons baking soda
- 1-1/2 teaspoons cinnamon
- 1/2 teaspoon salt
- 3 eggs
- 1/2 cup oil
- 1/2 cup milk
- 1-1/2 teaspoons vanilla extract
- 2 cups chopped peeled apples
- 1/2 cup flaked coconut
- 2 cups grated carrots
- 1/2 cup raisins
- 1/2 cup sliced almonds
Method
Step 1
In a bowl mix first 5 ingredients. In another bowl beat eggs and add oil, milk, and vanilla. Add wet ingredients to dry and mix until just moistened.
Step 2
Fold in remaining ingredients. Fill greased or paper lined muffin cups half full. Bake at 375° for 20-25 minutes.
