Ingredients

  • 3 cups fresh or frozen cranberries
  • 1 cup chopped walnuts
  • 2 cups sugar, divided
  • 3/4 cup margarine, softened
  • 3 eggs, beaten
  • 1 teaspoon vanilla extract
  • 1-1/2 cups flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

Ingredients (topping)

1 tablespoon sugar

1/2 teaspoon cinnamon

Method

Step 1

In a greased 9-in. x 9-in. pan, mix cranberries, walnuts and 1 cup of sugar. In a bowl cream margarine and remaining sugar. Add eggs and vanilla and mix well.

Step 2

In another bowl mix flour, baking powder and salt. Add to creamed mixture and mix well.

Step 3

Drop batter by large tablespoonfuls over cranberry mixture. Spread to cover. Mix topping ingredients and sprinkle over batter. Bake at 350° for 50-55 minutes until a toothpick inserted in center comes out clean.
