Ingredients

  • 10 5 ounce boneless skinless chicken breasts
  • 4 large tomatoes, sliced
  • 1 pound sliced mushrooms
  • 1 teaspoon olive oil
  • 1 tablespoon vegetable base
  • 10 slices American cheese
  • 1 tablespoon cornstarch
  • 1 cup water

Method

Step 1

Spray saute pan with cooking spray. Add olive oil. Saute chicken until brown on both sides. Transfer to a greased baking dish.

Step 2

Top chicken with 2-3 tomato slices, then a slice of cheese. Bake at 350° for 15 minutes.

Step 3

In saute pan cook mushrooms with vegetable base and water. Add cornstarch and cook until thickened.

Step 4

Serve chicken topped with mushroom sauce

To make a lower carb version go light on the tomatoes and leave out the corn starch. Add a little cream or half and half to the sauce instead.
