Ingredients
- 1 pound boneless skinless chicken breasts, cut into strips
- 3/4 cup orange juice
- 1/3 cup honey
- 3 tablespoons soy sauce
- 1 tablespoon cornstarch
- 1/4 teaspoon ground ginger
- 2 tablespoons oil, divided
- 2 large carrots, sliced diagonally
- 2 stalks celery, sliced diagonally
- 1/2 cup cashews or peanuts
- Hot cooked rice
Method
Step 1
Combine orange juice, honey, soy sauce, cornstarch and ginger.
Step 2
Heat 1 tablespoon of oil in skillet. Add carrots and celery and stir fry for 3 minutes. Remove vegetables from skillet.
Step 3
Heat remaining oil and stir fry chicken for 3 minutes. Return vegetables to pan. Add sauce and nuts. Cook and stir over medium-high heat until sauce is thickened.
Step 4
Serve over rice.
