Ingredients

  • 8 boneless skinless chicken breasts
  • 8 slices Swiss cheese
  • 3/4 cup milk
  • 1/2 teaspoon garlic powder
  • 8 slices deli ham
  • 2 eggs
  • 2 cups crushed cornflakes (about 4 cups before crushing)
  • 1/2 teaspoon each salt and pepper

Method

Step 1

Flatten chicken to 1/4 inch. Top each with a slice of ham and cheese. Roll up and tuck in ends. Secure with toothpicks.

Step 2

Whisk eggs and milk. In a separate bowl mix cornflakes and seasonings.

Step 3

Dip chicken in egg mixture, then roll in crumbs.

Step 4

Place on greased baking sheet. Bake at 350° for 40-45 minutes.

Step 5

To make a low carb version use crushed pork rinds instead of corn flakes. You can substitute chicken thighs too.
