Ingredients
- 1 broiler/fryer chicken, cut up
- salt & pepper to taste
- 5 cloves chopped garlic, divided
- 3 tablespoons olive oil
- 1 onion chopped
- 1 pepper diced
- 1 can (28 ounces) diced tomatoes
- 1 pound sliced mushrooms
- 1 cup red or white wine
- 1 cup water or broth
- 2 teaspoons Italian seasoning
- 1 cup black olives
- 1/2 cup fresh parsley
- Cooked pasta
Method
Step 1
Sprinkle chicken with salt and pepper. In a large frying pan brown chicken in oil along with a few pieces of garlic, about 5 minutes per side. Remove chicken from pan.
Step 2
In the same pan saute onion, pepper and mushrooms with 3 cloves of crushed garlic until tender. Add wine and broth. Simmer about 3 minutes, until reduced. Add tomatoes and Italian seasoning. Return chicken to pan and turn to coat.
Step 3
Bring sauce to a simmer, cover and cook over medium-low heat for about 40 minutes. Add olives and heat through.
Step 4
Sprinkle with parsley. Serve over pasta.
Step 5
This can also be prepared in the oven (bake at 350° for 1 hour after preparing), or in a pressure cooker (medium high pressure for 8 minutes, add mushrooms after removing chicken), or in a crock pot (low for 8 hours).
